Oh, a real rib expert! Ribs aren’t quite the tradition down under that they are in North America so I don’t claim any knowledge about authenticity, just that they taste great.
Letters are a great idea. It’s all about a lot of people making little changes that can make a big difference.

The combination of seasonings sound very unusual to me – but delicious! I’m from Texas and have eaten ribs fixed every which way you can imagine, so I’d love to try these.

I’m excited, too, that humanely raised animals are becoming mainstream – so much easier to find healthy food. I may have to start writing some letters to try to get my favorite grocery to make an effort like this.
